All about Hummus

Hummus is such a joy to eat and so simple to make. I love the versatility of hummus and how one can introduce other flavours to it.

Beetroot hummus, sweet potatoes, roasted peppers and spinach hummus are just a few flavours and colours to match. I remain a fan of the simple authentic hummus.

Ingredients

  • 1 can of chick peas

  • 1 whole lemon

  • 1 Tbs Tahini paste

  • Olive Oil

  • Salt to taste

  • 2 garlic cloves (I like mine roasted)

Method

  • Drain the chick peas (reserve some of the juice)

  • Rinse in water and rub gently between your palms to remove the skin (you can retain for more fibre, but pass through a mesh for a smooth hummus)

  • Put in a food processor with the rest of the ingredients and blend until smooth

  • Adjust the seasoning and add more lemon juice if needed

  • Serve with a drizzle of olive oil and garnish with toasted pine nuts or pomegranate seeds for a pop of sweetness

Varieties - Add roasted beetroots, sweet potatoes, roasted peppers or spinach for more variety
