All about Hummus
Hummus is such a joy to eat and so simple to make. I love the versatility of hummus and how one can introduce other flavours to it.
Beetroot hummus, sweet potatoes, roasted peppers and spinach hummus are just a few flavours and colours to match. I remain a fan of the simple authentic hummus.
Ingredients
1 can of chick peas
1 whole lemon
1 Tbs Tahini paste
Olive Oil
Salt to taste
2 garlic cloves (I like mine roasted)
Method
Drain the chick peas (reserve some of the juice)
Rinse in water and rub gently between your palms to remove the skin (you can retain for more fibre, but pass through a mesh for a smooth hummus)
Put in a food processor with the rest of the ingredients and blend until smooth
Adjust the seasoning and add more lemon juice if needed
Serve with a drizzle of olive oil and garnish with toasted pine nuts or pomegranate seeds for a pop of sweetness
Varieties - Add roasted beetroots, sweet potatoes, roasted peppers or spinach for more variety
