Fish: Halibut

I love seafood for its versatility; from a tuna tartare, pan fried Salmon, grilled prawns to butter poached lobster. Seafoods lend themselves to curries, broths, stews, grilling, pan frying, curing, pickling and barbecuing.
One of my favourite sea food is Halibut. It is a white fish that is delicate but it can hold its own against some strong flavours and spices. It works with a simple lemon butter sauce or coconut milk based broth or a rich creamy curry.
One of my favourite recipes is simply panfrying it and finishing it with butter and lemon. I always go for the steaks as cooking on the bone produces a juice and flavoursome result. Here’s my simply but delicious recipe.
Ingredients
2 Halibut Steaks
2 Tablespoons of light vegetable oil
2 knobs of butter
1/2 a lemon
Black pepper, salt, onion powder
Pinch of mixed dry herbs
Method
Add the oil to a non-stick frying pan and place over a medium heat
Season the fish with the salt, black pepper, onions and fresh herbs
Gently fry for a few minutes until golden on one side
Turn and add the butter and baste; add the lemon juice and continue to baste until cooked through
Serve with boiled baby potatoes, with steamed green beans and carrots
